In our meticulous process not only do we select the olive at the tree but also at reception of the fruit. We separate the different varieties and qualities and remove the small leaves, branches and earth.

Washing the olives is a meticulous process and it removes all types of attached impurities. The water in the washers that carry out this stage is changed constantly depending on how dirty the olives are.
